Fall Treat Recipes 🍂

Autumn leaves, pumpkin spice lattes, and warm scarves. That time of year has come again… fall! Fall is definitely one of my favorite seasons as it romanticizes nature's beautiful colors while also embracing warm and cozy feelings. What could be better than spending this comforting season at home baking yummy treats? To romanticize the start of the school year and the month of September, consider baking these 4 treats to satisfy your sweet tooth this fall at home!

Pumpkin Spice Latte

The Pumpkin Spice Latte is a coffee drinker’s favorite when it comes to fall. The latte is made up of exciting fall spice flavors, steamed milk, espresso, and often topped with whipped cream and caramel drizzle.

You will need…

  • 1 cup of milk

  • 1 tablespoon of pumpkin puree

  • 1 to 3 tablespoons of sugar (depends on how sweet you want it)

  • 1 tablespoon of vanilla extract

  • 1/2 teaspoon of pumpkin pie spice powder

  • 1/2 cup of strong hot coffee

  • Whipped cream

Directions

  1. Add milk, pumpkin puree, and sugar into a saucepan over medium heat. Let the saucepan heat until hot, then remove it. After, whisk in the vanilla, pumpkin pie spice, and the coffee.

  2. Serve with whipped cream, a sprinkle of pumpkin pie spice, and any other toppings of your choice!

Caramel Apple Pie

Just like the standard apple pie, the caramel apple pie is a delicious fall version of this classic dessert with a buttery, flaky crust, topped with sweet caramel sauce.

You will need…

  1. Pre-made pie crust

  2. 1 cup of granulated sugar

  3. Âź cup of all-purpose flour

  4. 1 teaspoon of ground cinnamon

  5. 5 cups of thinly sliced & peeled apples

  6. ½ cup of caramel apple dip

  7. 2 tablespoons of milk

  8. 1 cup of all-purpose flour

  9. ½ cup of packed brown sugar

  10. ½ cup of butter

Directions

  1. Heat the oven to 375 degrees Fahrenheit.

  2. To make the apple mixture, pour Âź cup of flour, cinnamon, and granulated sugar into a large bowl. Make sure to mix thoroughly. Afterwards, toss the sliced and peeled apples into a large bowl. Make sure when mixing to coat the apples in the mixture.

  3. Cook in the saucepan until the mixture caramelizes.

  4. Pour the apple mixture into the crust-lined plate.

  5. In a small bowl, mix 2 tablespoons of caramel apple dip and milk. After mixing, drizzle this mixture over the apples in the pie.

  6. To make the crumbly filling, mix 1 cup of flour and brown sugar in a medium bowl. With a pastry blender, cut in butter until the mixture looks like coarse crumbs. Then, sprinkle it over the filling.

  7. To make the lattice top, cut the crust into strips and place half of the strips across the filling in the pie plate. Weave the remaining strips with first strips to form a lattice pattern. Then fold the end of the strips to seal the pie.

  8. Bake the pie for 50 to 60 minutes in the oven until the color becomes golden brown. Afterwards, let the pie cool for 10 minutes.

  9. Finally, drizzle any caramel sauce or pumpkin spice on top to serve!

Carrot Cake

Carrot cake is a moist cake that has a bright, spicy flavor created by a combination of carrots, brown sugar, cinnamon, nutmeg, and vanilla. It will feel like butter melting in your mouth!

You will need…

  • 2 cups of all-purpose flour

  • 2 teaspoons of baking soda

  • ½ teaspoon of fine sea salt

  • 1 ½ teaspoons of ground cinnamon

  • 1 Âź cups of vegetable oil

  • 1 cup of granulated sugar

  • 1 cup of brown sugar

  • 1 teaspoon of vanilla extract

  • 4 large eggs

  • 3 cups of grated, peeled carrots (will need around 5 to 6 medium carrots)

  • 1 cup of pecans

  • ½ cup of raisins

  • 8 ounces of cream cheese

  • 1 Âź cups of powdered sugar

  • ⅓ cup of whipped cream

  • ½ cup of pecans (for the topping of the cake)

Directions

  1. Heat the oven to 350 degrees Fahrenheit

  2. In a medium bowl, whisk flour, baking soda, salt, and cinnamon until the mixture is well blended.

  3. In a separate bowl, mix the vegetable oil, granulated sugar, brown sugar, and vanilla. Add the eggs, one at a time, mixing thoroughly after each one.

  4. Then, add the dry ingredients, gently stir until they disappear and the batter becomes smooth. Then, add carrots, nuts, and raisins into the mixture. Make sure to stir thoroughly after all the ingredients are added.

  5. Add the mixture into a baking dish and bake for 35 to 45 minutes (until the top of the cake layers are springy when touched)

  6. For the cream cheese mixture, put cream cheese into a large bowl and beat it with a handheld mixer. Add in powdered sugar until the cream cheese mixture becomes fluffy.

7. Pour in the whipped cream and beat the mixture until the frosting is whipped and creamy. Cover the cake and let it chill in the fridge until it’s time to frost it.

8. Cut the cake layers in half and stack them on top of each other. Layer cream cheese frosting in between each layer.

9. Add the remaining frosting to the top of the carrot cake and use a butter knife or small spatula to swirl the frosting around.

10. Then, add nuts or cinnamon sugar on top to serve!

Peanut Butter Brownies

Of course we have to end this collection of recipes with brownies! These peanut butter brownies are so thick, chewy, and moist, they taste just like a Reese's peanut butter cup in brownie form!

Ingredients:

  • 1 cup of unsalted butter

  • 1 cup of semisweet chocolate chips

  • 1Âź cups of all-purpose flour

  • ½ cup of unsweetened cocoa powder

  • 1 teaspoon of salt

  • 1 cup of granulated sugar

  • 1 cup of firmly packed, light brown sugar

  • 3 large eggs

  • 1 tablespoon of vanilla extract

  • ½ cup of creamy peanut butter

Directions:

  1. Heat the oven to 350 degrees Fahrenheit

  2. In a small saucepan, put butter and let it melt over medium heat. Remove the saucepan from the heat and whisk in 1/2 cup chocolate chips into the melted butter. After all the butter and chocolate chips have fully melted, transfer the mixture into a large bowl and let it cool for a few minutes.

  3. In another bowl, sift flour and cocoa powder. Once the flour and cocoa powder have been sifted, add in salt.

  4. For the melted chocolate, whisk in the two sugars, eggs, and vanilla until the mixture becomes smooth. Then, mix in the remaining 1/2 cup chocolate chips.

  5. Pour the batter into the prepared pan and use a spatula to spread the batter

  6. Pour the peanut butter over the top of the batter. Use the tip of a knife to swirl it into the batter.

  7. Bake for 40 to 45 minutes, or 35 minutes for a super fudgy center.

  8. Let the brownies cool completely before devouring the dessert!

That concludes the list of recipes! On that note, NIS will be holding its annual Halloween Carnival again this year on October 31st after school. This offers the perfect chance to sell one of these fall themed baked goods to raise money for your club! That goes to beg the question, which treat do you want to bake at home this fall?
